“Non-Dairy Vegan Cheese with Meltability”
Courtesy of the NOTMILK Newsletter, Tue, October 6, 2009
One of the problems with those alternative vegan cheeses is that they do not melt like real cheese. Another problem with the current vegan cheeses is that they taste awful. Other than those two minor factors, they are wonderful…for some people…but they’re not to my liking.
Let me tell you about Kraft. Most American consumers have heard of Kraft Foods. Last year, Kraft did $37 billion in business. Compare Kraft to Cargill, a company most Americans have not heard of. In the fiscal year ending May 31, 2009, Cargill did more than triple the business that Kraft did and enjoyed a net profit of $3.33 billion. Cargill employs 168,000 workers.
I found this week’s Cargill press release to be of great interest to people consuming a plant-based diet.
Cargill writes:
Lygomme ACH Optimum functional system offers manufacturers a cost-effective cheese alternative for pizza…Furthermore, its appearance, taste and texture perfectly match those of processed cheese based on dairy proteins and are similar to those of traditional hard cheeses, such as gouda, cheddar or gruyere, thereby ensuring equal enjoyment and satisfaction for consumers.
From Cargill’s Website:
“In addition to the important cost and performance benefits, Lygomme ACH Optimum functional system also offers health advantages as it contains reduced calories (less fat and no saturated fats)…”
“It offers a cheese alternative for people with lactose intolerance and a unique opportunity for vegans to enjoy a product that has the characteristics and taste of cheese but without any animal-derived
ingredients.”
Let the rain fall from dark clouds on dairy’s future. So far as I am concerned, what falls from Cargill’s silver lining is manna from heaven
Bring on the vegan pizza, vegan macaroni and cheese, and vegan grilled cheese sandwiches. For dairy farmers, this represents the Acowpalypse. For everyone else, it’s Heaven on Earth. It’s also a new era for billions of farm animals that have suffered and died for man’s sins
